recipe: strawberry crumb cake

Some recent baking. A strawberry crumb cake that I found doing a google search. I made a few changes to the recipe, since my pan was larger, so I didn't have as much batter as the recipe said I should, so I put it in one layer instead of two as per the recipe. Also, I used 2 cups of fresh strawberries instead of some strawberries and some preserves.


Original recipe from Cookies Cakes Pies Oh My.

My version is slightly altered.
Cake:
1/2 cup butter, softened almost melted
2/3 cup sugar
2 eggs
1 tsp vanilla
1½ cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup sour cream
2 cups sliced fresh strawberries

Preheat oven to 350°. In large bowl cream butter and sugar by hand. Mix in eggs and vanilla. Stir together flour, baking soda, salt, cinnamon, and nutmeg. Gently stir dry ingredients into creamed mixture. Mix in sour cream, just until blended. Spread in greased 9″x9″ baking pan (I used a 10x15 pan). Spoon over batter in pan and gently spread. Sprinkle strawberries as evenly as you can.

Crumb Topping:
2 Tbl butter, softened almost melted
3 Tbl brown sugar
3 Tbl flour
1/4 cup finely chopped walnuts

In a small bowl, mix butter, brown sugar, flour, and chopped nuts. (I use my fingers to do this, or you can use two knives) Crumble topping evenly over cake batter. Bake for 30-35 minutes until golden brown.


I like to sprinkle just a little powdered sugar on top when I eat these :-)

Looks YuMM !! ne idea how many cals per serving ?

Oh dear, I have no idea about all that! I just make it and eat it. I try to keep butter down to 100-125gms per cake etc, but sometimes it's more than that. Like for the brownies I make, it's 150gms.
